Don't ever model from a sphere if you can help it. Spheres introduce way too many poly's way too early and it becomes very difficult to move everything to the places you want it when you need to move 30+ verts by hand.

And if you're modeling with a plane, just model the face + ears. There's no point modeling a skull you're going to replace with hair except for maybe to use as a size reference for the skull.

To be honest, I start with a generic human from another model and shape it into a stylized figure.
Can't say I approve of the method used by
