I've had these shoes for quite a while now and I've started to tire of their dull colouring, it looks good in some lighting conditions but most of the time i find they look very muted, but I much prefer leather shoes to be either darker richer colours, so I'm thinking of dying these, but I don't know what shade/colour I should dye them, if I should keep the caps/tongues/backs a different colour to the rest of the upper, etc. My first instinct would be to use a light brown shoe dye then give them a coat of rub-off dark brown dye(that would usually be used for leather sofas and such) to give them a more detailed, distressed look(which i really go for in shoes). Am I completely off-target here? what do you guys think?

I've dyed boots before (US jump boots) and it can work but it's a lot of effort, and quite hard to get right. I had a tan pair I wanted darker so I rubbed off as much of the dye already there and any polish with acetone, then dyed them black, then rubbed down the black again with the acetone to give it a bit of depth and make it less BLACK!!!!! Then polished them a couple of times with some dark brown polish. They came up nicely but it probably took about 6 hours of work. I think you might be better just polishing them a few times with some darker polish. These look like they haven't been polished properly for a while anyway, should get a bit of a richer colour then you can decide.
