I'd like to note that no one in this thread ever got past the notion of sword wielding Medieval fantasy...
If you really want to do something diffrent drop the sword. Everyone thinks fantasy needs to be an adventure story, but doesn't fantasy imply by the very nature of the word what one own imagination can conjure? Is this thread going to relegate the ideas of what can be fantasy to Game of Thrones or Lord of the Rings?

I agree that fantasy needs to be taken away from the Doritos and Mt Dew, but I don't think you're see what can be done with it with just old fashioned hard work.
And even if these tales and poems are highly symbolic, what's to say you couldn't use that symbolism in the story?
Has the literary world given up on symbolism all together?
These things can be interwoven and artfully put into a narrative, you just don't make the narrative about them.
My suggestion is to list what fantasy tropes need to die.
I'd personally like to see these go away. Forever.
