Some, like Fanille (well, Light/Fang is the popular pairing among Western fic writers) and Mass Effect have built-in fandoms, and you'll find mentions of those frequently. But most pairings, not just yuri game ones, need somebody to "champion" them. Heck, DWP mentioned above? It was a dumb movie but has a great fandom, because there are people actively writing and putting out content.

Or like that one L4D pic, just random humorous fluff from the line "Zoey startled the witch." Google that and look up the content. There are actual fics for Zoey and a witch and everything.
In terms of improving your writing and getting feedback,
>>1164124 is right, but don't underestimate the importance of you helping your favorite fandoms to grow yourself, in many different ways. I doubt the HermionexFleur fandom would be where it is now with ADPT.
http://www.fanfiction.net/u/1204765/CantFaketheFunk has some great AdrianxFranziska fics to make a relatively niche pairing big(ish). And on the other hand, something as popular as Mitsu just never got the fic boost to last like Shiznat and the various Sailor Moon pairings do to this day.
If you write and write well, people will read. It seems like a very unfair cycle where you only get readers if your fic is recommended, and you only get recommended if your fic is read, but there are enough people out there who will try things and as long as you keep at it, you'll make it.
