Tostones! Pick them green, slice them, fry them once, flatten them, fry them again, sprinkle with garlic salt, or mash garlic cloves in oil and spread some on, or mix mayo and ketchup plus crushed garlic and dip.

boil them whole for about an hour. peel, run the plantain through a potato ricer. work the plantain shreds into a dough. make rounds, stuff with your favorite empanada filling*, deep fry till golden brown.

*my favorite is sauteed spinach with a manchego cheese sauce.
