the cheese curds make the poutine. ive been at places where they serve "poutine" with mozerella or other cheese and its just fucking wrong. if the cheese doesnt squeak when you eat it, youre eating substandard shit.

On which board? I've been posting on /ck/ for about 2 years, and this is the first time I've seen it. Not the anon you replied to btw.

That said, I'd like to add that poutine is great. I had it 3 times during my trip to Canada.

the simple equation that makes all poutine is as follows:

Potato (classically fries) +cheese (classically curds) + gravy (usually chicken) = poutine

so you could do oven roasted sweet potatoes with swiss cheese and a rosemary lamb jus.
in my opinion this could still be considered poutine
