beef stew recipes.

my dads beef stew is fucking awesome but he wont give me the recipe. he gave it to my older brother and he totally fucked it up. practically a sponge with all that flour.

give me a recipe that will blow them both away so i can call them both an asshat

Put the flour and powders in a bag, mix in the beef cubes, toss them around for a bit then pan fry them until they're a light brown color. Stick that shit plus the vegetables plus the soup in a crock pot, add maybe a quarter cup of water, cook all day.

Tomato Soup

Put the flour and powders in a bag, mix in the beef cubes, toss them around for a bit then pan fry them until they're a light brown color. Stick that shit plus the vegetables plus the soup in a crock pot, cook all day. Add water throughout the day as needed, but be careful not to add too much. The vegetables and meat will provide plenty of liquid on their own.

Put them into a cold pot.
Turn on the heat to high.
Lower the heat when the beef starts to sizzle.
Turn the chunks over and over and over to render out the fat.
Reserve two tablespoons of the rendered fat and put it in a bowl with two tablespoons of flour.
Sop up the rest of the fat.
Add the flour/fat back to the pot with some tomato paste and cook it to get rid of the floury taste.
Add some potatoes, some carrots and some onions to the pot.
Cover everything with beef stock.
Up heat to high, bring to a boil, lower to a simmer and cook until thickened and delicious.
Adjust for salt.

All you really need to do for a good beef stew is to brown the meat and throw it in a crockpot with a bunch of veggies and whatever spices you want, plus some water, and let it cook on a low setting until it's tender enough to fall apart.

Been a while since I've made it. You gotta figure out the proportions yourself but this was what I did:

Need a crock pot and a stainless steel saute pan. Gonna deglaze shit in it.

Chuck eye roast in cubes, between 1 and 2 inches.
salt and pepper
small diced onions
minced garlic
flour
red wine, I used burgundy. Never more than a cup if making for 6+ people. If around 4 I'd use half.
beef broth
bay leaves
thyme
thick diced potatoes
peas and diced carrots

Get your crock pot going as you begin.
Toss up your beef with some salt and pepper. Cook on high with a bit of oil. Important that the pan heats up first. Test it with a piece of meat to make sure it sizzles. Brown the meat nicely and make sure you don't touch it before it turns color. Cook in batches if you have to. Shit will stick to the pan, don't worry about that.

Remove meat and set aside after it's browned but not fully cooked. Reduce heat to medium. Throw in onions and cook til translucent. Add garlic for 30 secs. Put in the flour. It should be somewhat pasty. If it's too dry, add a bit more oil so it's not so dusty.

When the flour has a nice light brown coating, put in the wine and deglaze the shit off the bottom. Add beef stock, a few bay leaves and a pinch of dried thyme. Add a few dashes of granulated onion and garlic powder if the flavor isn't strong enough.

Throw everything into the crock pot and add your potatoes and carrots. Let it cook til the meat falls apart on your ass. Add peas after meat is tender. Add extra salt to taste. Boom, simple beef stew.

Some recipes call for the vegetables to be sweated and the meat added to them. This is generally the method that should be used for leaner cuts, otherwise, you'd want to add the meat to the pan alone in order to render out its fat.
