On raw ground beef: It's okay as long as you grind the meat yourself. No different than any other beef then. I still wouldn't purchase pre-ground meat and eat it raw.
On Shellfish: I thought about and while I can think of a few other ones, in the USA by far most of the raw shellfish eaten is going to be either oysters or clams. The other ones are mostly regional/minor and not really worth worrying about.
On pasteurized eggs: Most eggs you buy here are pasteurized anyways.
