>>27703071. Make sure you get the skillet hot as fuck (around 500 F)
2. Bring steaks up to room temp
3. Rub grapeseed oil or some other oil w/ high smoke point on your steak
4. Season steak w/ sea salt/kosher salt
5. Throw the steak in skillet for 2 mins per side- don't fucking move it around even though you will be dying to do so b/c moving it around fucks up the Maillard reaction
6. After 2 mins per side remove it from the skillet, put it on a plate, cover the plate + steak with foil and leave it alone for 10 mins.
7. After 10 mins, uncover, crack some black pepper on that bad boy
8. Consume!
also, what do you mean by grill? do you mean you're going to put the skillet on an outdoor grill? the reason i ask is cuz it sounds like you don't know what you're doing and whether or not you do this inside on a stove or outside on a grill can change some of the advice i've given. namely, if you're doing it inside then make sure you throw your smoke alarms in the trash
