For beans, black beans are the healthiest I think.
For international, try flours such as teff, spelt, brown rice flour, and quinoa; even try arrowroot instead of using cornstarch, but read instructions on how to use it, it is different than using cornstarch. Pick up a tube of wasabi paste and learn how to use it.
As far as cheapness goes, can't help you there. At least these things have a much higher food value than the cheaper crap foods do, so in the long run regarding your health they are cheaper.
