Instead of a salad, have a stir-fry or something with a variety of vegetables, some mushrooms, maybe some legumes. Heck, throw some chicken on in there! Eating healthy is having a balanced diet, not starving yourself or having some scant veggies covered in dressing.
And you can't just do it for one meal a day, either. Have a balance of food groups for every meal with controlled portions and you'll be far better off and it isn't hard to do. Plus it leaves more caloric intake for beer without getting a beer gut!
