I'm having whole grain spelt noodles with a light marinara sauce (seasoned with cumin, black pepper, cayenne pepper, pink Himalayan salt), homemade, whole grain, teff flour, peanut butter cookies (teff flour, Canadian maple syrup, pink Himalayan salt, Canola oil, all-natural, pure, vanilla extract, and Smucker's All-natural peanut butter ), Tree of Life brand, all-natural, "razor" sharp, cheddar cheese garnished with slices of red onion, wasabi-covered roasted peas, roasted pumpkin seeds, with my own homemade red wine that has aged for 3 years (last of that bottle). All of which tastes great and the wasabi-covered peas are a real kick between bites of noodles. What are you having this fine evening, anons? Something delicious I assume.

Had half a vegetarian burrito from a local restauant. (half since it was so HUEG) Plus a key lime pie bar, homemade. Sorry no pics, already ate it. IT WAS GOOD.

Regardless, here's the recipe for the teff peanut butter cookies and some in-cooking shots. You may notice a hunk of my pink Himalayan salt in this shot. I finally decided to break it up into smaller more manageable pieces. It really is amazing stuff.

Teff is so freaking expensive here. It's a decision between a $3 5 pound bag of regular whole grain wheat flour and a $9 bag 2 pound bag of teff flour. At any rate, there's some good teff recipes here,
http://www.teffco.com/recipes.html but I find teff is better blended with other flours like brown rice flour, hazelnut flour, etc.

how are those peanut butter cookies? hadn't heard of teff before.. I had cubed leftover easter ham, a cinnamon crunch bagel from panera's, a raw organic carrot, and homemade lemonade for dinner. Just finished making some mini cheesecakes, which I will put on top of orange drop cookies for dessert later with tea. not bad for a lazy day...
