Not sure why you would want to put buffalo sauce on anything besides a wing, to be honest. It's good at concealing the shitty quality of low-tier chicken wings, and not much else.

when i make buffalo chicken salad, i just grill/pan fry the chicken as normal (salt, pepper, olive oil, whatever herbs), and make a salad with onion, celery, shredded carrots, and whatever else i wanna put in it, and i use blue cheese and hot sauce as a dressing. it is good.

don't try to cook the chicken a certain way to make it spicy. think about it, when you make wings, you just fry the chicken and add the buffalo sauce later.

Butter
Frank's/Crystal Louisiana-Style hotsauce
Garlic Powder
pinch of Salt
A dash of tabasco or sriracha
A dash of vinegar - (standard recipe calls for white, though I've used balsamic as well - it's worked pretty good for me!)

Melt butter in saucepan, add hotsauce, garlic powder and salt, and vinegar.

Whisk together while it emulsifies, but the SECOND that shit starts to bubble, take it off the heat. Throw in a bowl with your chicken and toss to coat.

You dumbfucks don't know that there's only ONE way to make buffalo chicken, and that's WINGS, morons.

Trim wings -- remove wing tip, cut through other joint for two pieces from each wing. I call one the "drumstick" (the one with one bone) and the other the uh, "other one" (two bones). I favor the drumstick so I hoard them all for myself.

Dry the wings with a paper towel and put them in 350°F peanut oil and cook them 15 minutes or so until they're done. Note that there was no flour, no breading or batter. That is not Buffalo Wings, though there is a school of thought that says a tiny bit of corn starch or rice flour will make them crispier, but who knows?

Also, don't bake or grill your wings. Just don't.

Mix together equal parts Frank's hot sauce and melted butter, and maybe a splash of vinegar or garlic power, but don't overdo it. JUST HOT SAUCE AND BUTTER IS FINE. Put the sauce in a big bowl, put in the wings and toss around until the wings are covered in sauce. Serve up your wings with celery and carrots but don't expect me to eat the vegetation.

BLUE CHEESE SAUCE

Important component! Put some GOOD crumbled blue cheese in a classy bowl and add some sour cream, mayonnaise, grated onion, garlic powder, and some parm cheese (if it's too watery) or milk (if it's too thick). Let it sit overnight to let the flavors meld. Dip wings in blue cheese sauce.
