I'm looking for a great curry recipe, preferrably with chicken. I'll be making a trip to the store in about 10 minutes to grab any ingredients I dont need.

Any ideas?

I have some Yellow curry bought, and I think I'm going four a more thai based recipe.

I'm making the curry because my prom group is going to a thai place to eat and I want to make some for the group to try so they know what they're getting into.

Easy Thai Curry:

1/3 cup oil (canola is a good choice)
1/3 cup Mae Ploy curry paste
Meat
2 limes
2 cans coconut milk
1 Tbsp sugar
2 tbsp fish sauce (optional, but tasty)

(a list a mile long of all the optional awesome ingredients that can make a curry amazing).

Step one: Prepwork. Shake up your coconut milk, open cans, open bottles, quarter your limes, try to have your ingredients pre-measured out so they can just go in, bam bam bam, as needed.

Step 2: Cook your meat. Put your oil in the wok, toss in the meat and curry paste, stirfry it up. Try not to burn the curry paste. Add the fish sauce, if using.
