Try an actual vegetarian dish maybe?
take some broccoli and asparagus, boil the broccoli till its al dente (tender but still with a slight crunch) and griddle the asparagus. In a frying pan, heat some butter until it just starts to go brown then throw in some lemon juice (just a little at first, adjust the flavour later, oh and stand back when you put it in) swirl that around then add a bunch of fresh herbs and season to taste with salt, pepper and more lemon juice of you want, toss the broccoli and asparagus in the sauce and eat with some good bread.
