Beans are your king now - get your protein from dairy (if veggie and not vegan) as well - get in fruit and veg so as to get your vitamins. Eat good cereals (you will want to find one with good vitamin b12 in it (b12 is the troublesome one)). Get a vegetarian vitamin and Iron supplement. You're gonna put on weight - you'll need much more calories to fill you and for the first few months (well, this is how it was for me anyway), you'll feel hungry all the time. This is only cos your body is not used to not having meat in it.
If you like quorn, use it a lot - great for nutrition/protein. Carbs are easily obtained, pasta/rice/noodles(if vegan look out for noodles egg) etc. Avoiding dairy ending up in things isn't tough as milk will be listed in allergy advice (though it will be tough to stop eating) If vegan good way would be to get carby stuff from asian places, and try tofu - not that bad. Also, soya milk is fine replacement for dairy milk - but i'm trying to give you a guide that works either way, but i really think goin veg first is your best bet. It isn't that hard, and there are a lot of things you can make.
