you wanna sautee the garlic, herbs and spices in olive oil/butter. i use garlic, parsley and crushed red pepper. you can add whatever you like though: oregano, thyme, black pepper, salt. when the garlic gets fragrant, dip the bread in this mixture and put it under the broiler until toasted. for an added kick, shred some mozzarella on top before broiling.
