They all tell me about how they fuck around with the meat all day and how the only time they actually get their act together is when the FDA people are watching them. Even then, they say that someone will often times come by ahead of time and advise them what kind of shit the FDA people are paying attention to so that they pay special attention to it.
There are a ton of violations that go on on a daily basis there that should get the plant shut down, but no one really cares just as long as they don't fuck up too bad.
With that in mind, you may also need to worry about parasites in the meat in the form of cysts. I know this is the case with pork, but don't think it's the case with beef.
Mad cow can only come from nerve tissue. It contaminates the meat when a piece of infected brain or spinal cord gets mixed in with the other meat. This has been the case with ground meat before piece of spinal cord getting ground in.
