Inject that bird up with a better marinade.
½C oil or melted butter, 3T Worcestershire, 1T kosher or fine grain sea salt, 2T each onion and garlic powder, 1t each ground bay leaves, thyme, sage, and pepper, black or white, and ¼C water, divided.
Simmer all ingredients to infuse the oil with the flavor, mix in the water in small amounts until thinned enough for injecting. Inject below skin in center of meat, moreso in breast. A little goes a long way - other variations follow.
Beer & Butter
½C butter, ½C beer, 2T each salt, garlic, and onion powder, 2T each hot pepper sauce, Worcestershire, 1T soy sauce.
Cajun
1C lemon juice, ½C each liquid crab boil, olive oil, and butter, 2T each Creole seasoning, garlic, and onion powder, 1t cayenne, hot sauce to taste.
Hot Pepper
1C chicken broth, 4T Hot Sauce of Choice, 3T Worcestershire, 1T each salt, garlic, cayenne powder.
