I got this recipe from a little book and made it today for my belated thanksgiving! It's really easy and requires no baking.
-Caramel ice cream topping
-Graham cracker pie crust
-3/4 cup pecan peices
-1 cup cold milk
-2 3.4oz packs instant vanilla pudding
-1 (normal size) can of pumpkin
-Cinnamon/Nutmet/Pumpkin pie spice
-Tub of cool-whip DEFROSTED
Coat the bottom of the pie crust with a decent amount of caramel, and sprinkle with 1/2 cup of the pecans.
Then, mix the milk, pudding mix, and pumpkin together until totally smooth. Add spices until it tastes right. Then stir in 1 1/2 cups of the cool-whip.
