Tonight: Gorditas
They're pretty much really thick corn tortillas (gorditas means fatties) which are opened up and filled with diverse ingredients, like beef, beans, chicharrones (pork rinds) etc.
They're my favorite mexi fast food, they're cheap and filling!

Your thoughts?

didn't exist till Taco Bell invented them.. SO I walked in to a an all Mexican restaurant and I look over the menu and I asked the waitress.. Dam'e tu' gordito por favor.. Gesturing to the menu cause i didn't see it.. I swear to God she turned and went to go get the other chubby waitress.. I changed my order to the Nombre Dos ate my yummy tacos Lengue and left.

If you can't speak Spanish then just say the item or say I want *blank*

ex. "Quisiera un taco de lengua y dos de tripa."

Quiero can be used in place of quisiera. It's less polite but acceptable. It's like the difference between saying: "I would like" and "I want."

Dear /ck/,

I am making some delicious turkey quesadillas to try to finish up my leftovers. I am at a loss of which cheese to use.

My primary purpose is to use up all the leftovers while making some food my company can at least tolerate. I have some American cheese I got at a party, a block of cheddar, Colby Jack slices, and sticks of mozzarella. The American needs to be used up the fastest, but I have the most cheddar in the cupboard.

This thread is now semi-useful!

Food is an evolving form. And there's many ways to create food.

Monterrey Jack and Cheddar are king. BUT any melting cheese or semi-melting cheese works as long as it taste good to you.

Pic related, you it's some Oaxaca cheese. It's like a long cheese ribbon made of hundreds of small cheese strings.

They're using queso criollo, it's similar to Munster.

Personally, my favorite cheese to use is a good pepper jack. You want a cheese that can speak for itself and pepper jack does that well. Melts perfectly and has just the right amount of spiciness and flavor.
