Veganism makes no sense at all, (in addition to what you said) in that if you are against commercialized production of food, you have to apply it to industrial agriculture as well. That said, one should be able to justify raising eggs and meat for your own consumption.
I agree that murder is wrong, but murder is extremely limited to what we can view as sentient. Sentience is a narrow sliver of consciousness, which we can't even define. We have no way of know if even plants can suffer on a level that we cannot comprehend because we are not plants and our perspective is centric to us.
At any rate, suffering is inescapable like you said. To mitigate it in the name of morality takes a good bit of hubris. To acknowledge the reality of the universe as something that flows through all of us is to understand that we cannot end suffering so long as we live.
