Hello /fit/, co/ck/ anon back with a few more recipes for y'all that I found. I'm going to be experimenting with more /fit/ style recipes since I have been losing weight and exercising as well. Since I was here last, I have bumped up my fitness routine and I have been lurking here more. I was inspired by you guys and pushed myself harder and lost another pound this week. Thanks /fit/!

Once again, if y'all have any cooking questions or would like recipes, just ask. And that gainz cake....of course it tastes like shit, it doesn't even have any salt in it haha.

Anyway, pic related it's a nice and healthy turkey meatloaf with oatz n spinach.

Here is a spicy chicken recipe that is "breaded" with oatz. Everything looks legit except....margarine??? UGH, wtf is this, the goddamned 1980s??? Sub butter for that shit and you're good to go. Also I'm not so sure about fruit salsa, but that can be omitted altogether. This is also a good base recipe that you can use for oat coated chicken breast, and just sub other spices if you like.

Thanks, here's the first one;

Broccoli Soup
2 medium heads of broccoli
4 cups chicken stock
1 bag spinach
2 garlic cloves, minced
1 shallot, diced
1/4 yellow onion, diced
1-2 cups shredded cheddar
1 cup milk
2 tablespoons parmesan
salt and pepper, to taste
olive oil
Separate broccoli into stems and florets. Cut them up and put florets aside.
Boil stems with spinach and chicken stock in a dutch oven until tender. Puree in a blender until smooth.
Add olive oil to dutch oven and cook onions and shallot for 5 minutes. Add garlic and cook for 2 more minutes. Return broccoli puree to the pot and add milk, salt and pepper. Bring to an almost boil while stirring.
Add cheeses and florets, stirring into incorporated. Cook until florets are tender crisp. Garnish with pepper and olive oil.

Broccoli Cheddar Casserole
1 (10.75 ounce) can condensed cream of mushroom soup
1/4 cup mayonnaise
1 egg, beaten
2 (10 ounce) package frozen chopped broccoli
1 cup shredded sharp Cheddar cheese
salt and black pepper to taste
1 tablespoon paprika
Preheat oven to 350 F (175 C/gas mark 4). Butter a 9x13 inch baking dish.
In a medium bowl, whisk together condensed cream of mushroom soup, mayonnaise, and egg. The add the broccoli, cheese, salt, pepper and paprika. Spread mixture into prepared baking dish, and smooth top of casserole.
Bake for 45 minutes to 1 hour in the preheated oven.

I can post the recipe for homemade cream of mushroom soup if you want that instead of buying canned.

Pan Fried Broccoli
2 tablespoons olive oil/butter
1-2 garlic cloves, minced
1 pound broccoli, cut up
Lemon juice, to taste
1/2 teaspoon crushed red pepper
opt. 1/8 teaspoon paprika
opt. 1/3 cup grated parmesan
Place oil and broccoli in pan with garlic and lemon juice. Heat on medium low until crisp tender.

Also, a simple way that I prepare broccoli is to boil a pot of salted water (about 1/2 tsp for the entire pot) and toss the broccoli in. Give it about 3 minutes and then drain. Crisp tender and the salt gets into the broccoli so it tastes better but not salty. This way you don't even want any other condiments etc with it.

Broccoli Pesto
2 cups broccoli florets
1 1/2 cups fresh parsley leaves
1/4 cup pine nuts
3 teaspoons lemon juice
1 teaspoon lemon zest
1/2 teaspoon anchovy paste
1 garlic clove, minced
1 teaspoon capers
1/2 teaspoon red pepper flakes
1/4 cup olive oil
salt and pepper, to taste
1/2 cup grated parmesan
1 pound penne, rotini or farfalle pasta
Boil a pot of salted water and place the broccoli in it. Cook 3 minutes or until tender.
Remove the broccoli with a slotted spoon and set aside. Add the pasta and cook until al dente.
Place the broccoli in a food processor with the parsley, pine nuts, lemon juice, zest, anchovy paste, garlic, capers, red pepper flakes, olive oil, salt, pepper and parmesan.
Add a little of the pasta water to loosen the sauce.
Drain pasta and toss with sauce.

If you can't have pasta with this, it's great over chicken and veg. The anchovy paste and capers are optional.

In a bowl, beat eggs and add milk, dijon mustard, thyme, mozzarella, parmesan salt and pepper. Then add the broccoli mix. Pour into pie dish.
Bake 30 minutes or until set. Sprinkle top with cheese and let cool 5 minutes.

Broccoli Salad

Combine all ingredients and toss to coat. Chill 2-3 hours or overnight.

You can sub any cheese you like and any salad dressing. A Greek dressing would also be good with this.

Seared Sesame Crusted Ahi Tuna Salad
2 (6 oz) tuna steaks
1/4 cup black sesame seeds
1/2 cup white sesame seeds
salt and pepper, to taste
2 tablespoons canola oil
1 avocado, sliced
1/2 bunch asparagus, blanched
2 heads broccoli, blanched
2 cups cherry tomatoes, halved
1 bag mixed spring greens
WASABI VINAIGRETTE;
1/2 teaspoon wasabi paste
1 tablespoon rice vinegar
1 tablespoon soy sauce
3 tablespoons olive oil
salt and pepper, to taste
1/8 teaspoon sesame oil
Mix the sesame seeds and season the tuna. Dredge tuna through seeds, coating entirely.
In a non-stick pan, warm the oil until smoking and place the tuna in the pan. Cook until seeds turn golden (about 1 minute). Carefully turn and cook another minute.
Combine all vinaigrette ingredients in a bowl and whisk to emulsify.
Place lettuce and tomatoes in a large bowl and pour dressing over. Toss to coat well. Divide into 2 large bowls and place broccoli, asparagus and avocado on top.
Slice tuna and place in center.

has broccoli, /fit/ friendly, one of my favorite salads.

Cream of Mushroom Soup
1 tablespoon olive oil
8 ounces sliced fresh mushrooms
1 cup chicken broth
1/2 yellow onion, chopped
1/4 teaspoon dried thyme
1 tablespoon butter, melted

1/8 teaspoon salt
1/8 teaspoon black pepper
1/3 cup half-and-half
1 teaspoon sherry
In a large heavy saucepan, add oil and saute onions until soft. Then add chicken broth, mushrooms and thyme. Cook for 10 minutes.
Add the melted butter, and whisk in the flour until smooth. Add the salt, pepper, and half and half. Stirring constantly, bring soup to a boil and cook until thickened. Adjust seasonings to taste, and add sherry.
*add 1 tablespoon cornstarch to thicken for sauce

if you're using this to sub a condensed soup, add half the chicken broth and half and half. which can also be subbed with milk. The sherry is optional.

4 eggs
2 cans tuna packed in water, drained
1/4 cup mayonnaise
1 teaspoon yellow mustard

1/4 cup sweet pickle relish

Place egg in a saucepan and cover with cold water. Bring water to a boil and boil for 10 minutes. Remove from hot water, and place in bowl of cold water with ice. Let cool, peel and chop.
Place the chopped eggs in a bowl, and stir in the mayonnaise, mustard, tuna, pickle relish, horseradish, and green onion. Season with salt, pepper and paprika. Stir and serve on your favorite bread or crackers.

or eat straight out of the bowl. horseradish is optional. i usually have to be in the mood for that shit.

I would sub green beans for the cannellini beans or just add them as well. The lemony flavor that you like is from the fresh parsley, so be sure that you get it fresh (not dried, which is tasteless green confetti anyway---never buy that shit it's a waste).

Pork Roast
1 teaspoon ground sage
1 teaspoon ground marjoram
1 teaspoon paprika
1/2 teaspoon salt

1 (5 pound) boneless pork loin
1/2 cup sugar
1 tablespoon cornmeal flour
1/4 cup white vinegar
1/4 cup water
2 tablespoons soy sauce
Preheat oven to 325 F (165 C/gas mark 3).
In a bowl, combine sage, salt, pepper and garlic. Rub thoroughly all over pork. Place pork in an uncovered roasting pan on the middle oven rack.
Bake in the preheated oven approximately 3 hours, or until the internal temperature reaches at least 150 F (65 C).
Meanwhile, place sugar, cornstarch, vinegar, water, and soy sauce in a small saucepan. Heat, stirring occasionally, until mixture begins to bubble and thicken slightly. Brush roast with glaze 3 or 4 times during the last 1/2 hour of cooking. Pour remaining glaze over roast, and serve.

pork tenderloin is just as low cal and low fat as a chicken breast and is packed w/ protein as well, so it can be a great alternative to chicken breast if you get sick of it. nix the glaze if you're concerned about carbs, and of course put whatever spice rub you want on it.

In fact, since you mentioned brown rice here's this one;

Greek Rice Salad
1/2 cup brown rice
2 1/4 cups water
1 avocado; peeled, pitted, and diced
2 tablespoons lemon juice
2 tomatoes, diced
3/4 cup diced English cucumber
3 tablespoons diced red onion
1/4 cup crumbled feta cheese
2 tablespoons sliced Kalamata olives
2 tablespoons chopped fresh mint
1 1/2 tablespoon olive oil
1/2 teaspoon lemon zest
1/4 teaspoon minced garlic
1/4 teaspoon salt
1/4 teaspoon black pepper
Bring the brown rice and water to a boil in a saucepan over high heat. Reduce the heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 45 to 50 minutes; remove from heat and allow to cool, fluffing occasionally with a fork.
Toss the avocado and lemon juice together in a large bowl. Add the tomatoes, cucumber, onion, feta, olives, mint, olive oil, lemon zest, garlic, salt, and pepper to the bowl; lightly toss the mixture until evenly combined. Fold the cooled rice gently into the mixture. Serve immediately or chill up to 1 hour; the salad does not last well for more than a day as the tomato and cucumber begin to release their juices and the salad becomes watery.

Know how to cook salmon in some new ways? I'm a little tired of a bit of butter in a pan. I season with tarragon, thyme, some lemon, and a bit of pepper; but it's getting stale.

I heard about some way to cook where you dunk it in some olive oil that's slightly too hot to place your finger in. (Friend is a chef, told me when we were drunk at a party, forgot all about it.

Herb Crusted Salmon Salad
2 salmon fillets
mix of basil, oregano and thyme
lemon juice
2 tomatoes, wedged
bunch of asparagus, trimmed
1 bag spring salad mix
balsamic vinaigrette
Preheat oven to 350 F.
Place salmon in baking dish and splash lemon juice on. Coat top with herb mix. Place in oven and cook 20 minutes.
Boil water in a saucepan and place asparagus in for 2 minutes or until crisp-tender.
Place lettuce, tomatoes and asparagus in a large bowl and pour in dressing. Toss well to coat. Serve with salmon.

Baked Salmon
2 cloves garlic, minced

Grilled Salmon
1 1/2 pounds salmon fillets

In a small bowl, stir together soy sauce, brown sugar, water, and vegetable oil until sugar is dissolved. Place fish in a large resealable plastic bag with the soy sauce mixture, seal, and turn to coat. Refrigerate for at least 2 hours.
Preheat grill for medium heat.
Lightly oil grill grate. Place salmon on the preheated grill, and discard marinade. Cook salmon for 6 to 8 minutes per side, or until the fish flakes easily with a fork.

Maple Salmon
1/4 cup maple syrup
2 tablespoons soy sauce
1 clove garlic, minced
1/4 teaspoon salt
1/8 teaspoon black pepper
1 pound salmon
In a small bowl, mix the maple syrup, soy sauce, garlic, salt, and pepper.
Place salmon in a shallow glass baking dish, and coat with the maple syrup mixture. Cover the dish, and marinate salmon in the refrigerator 30 minutes, turning once.
Preheat oven to 400 F (200 C/gas mark 6).
Place the baking dish in the preheated oven, and bake salmon uncovered 20 minutes, or until easily flaked with a fork.

look for a sugar free marmalade like st. dalfours or trader joe's.

1 egg, beaten
1/4 cup milk
2 green onions, chopped
1 teaspoon dill
1/4 teaspoon black pepper
14 oz can salmon
1/4 cup bread crumbs
Vegetable oil
opt. paprika, garlic, worcestershire, dijon mustard, cayenne
Preheat oven to 375F.
Drain the salmon and place in bowl. Flake with fork and combine with egg, milk, green onions, dill, black pepper and bread crumbs.
Form into patties and place on baking tray. Brush with vegetable oil on top and bottom.
Bake for 20 minutes. Serve with cocktail or tarter sauce.

take your oatz and put them in a food processor (or not), and turn them into oat flour. (or just buy oat flour), and then sub that for the bread crumbs. fuck yes.

Place salmon skin side down on lightly greased foil. Sprinkle with lemon juice, onion, thyme, oregano, salt, pepper and dot with butter. Fold foil around salmon; seal tightly.
Bake at 350 F (176 C/gas mark 4) for 30 minutes. Combine the sauce ingredients until smooth.

ground turkey tacos with toasted corn tortillas (not fried) and veggies

Ive done something similar, its good shit.
Though I make it by:
Salmon + egg + seasoning in a fucking blender, gets like minced meat - form patties and fry it in the pan. Works wonders.

Olivada Pasta Salad
1 garlic clove, minced
1/2 cup coarsely chopped green olives
1 1/2 tablespoons capers, chopped
1/2 tablespoon red wine vinegar
1/2 teaspoon anchovy paste
1/2 tablespoon dijon mustard
1/8 teaspoon crushed red pepper
1/4 cup olive oil
1/2 pound rotelli pasta
1 10 ounce bag frozen cauliflower
2 cups cherry tomatoes, halved
1 cup shredded mozzarella
1 tablespoon oregano
salt and pepper, to taste
Use a food processor to make a rough puree of the garlic, chopped green olives, capers, red wine vinegar, anchovy paste, dijon mustard, crushed red pepper and olive oil.
Boil the cauliflower and drain. Then boil the pasta and drain well.
In a large bowl, add pasta, cherry tomatoes, mozzarella, cauliflower and oregano. Season and pour the olivada over it and mix well.

That is delicious if you like olives a lot...but basically for a cold pasta salad just get your fav short pasta like penne or rotini and mix it with cut up veg, shredded cheese, canned tuna or chicken (canned or otherwise) and your fav dressing, but usually an italian style dressing. you can also add canned beans to the salad if you like that. and then chill it of course. if you make a large batch it will last up to 4 days in the fridge, which by the way is the cut off time for things being "safe" to eat and fresh.

Greek Dressing
3 tablespoons olive oil
1/2 teaspoon garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon white onion, minced
1/2 teaspoon Dijon mustard
1/4 cup red wine vinegar
In a container, mix together the olive oil, garlic, oregano, basil, black pepper, salt, onion, and Dijon mustard. Pour in the vinegar, and mix vigorously until well blended. Store tightly covered at room temperature.

yeah I'm pretty good at baking. I often make my own yeast breads including regular loaf bread and baguette style breads. I posted a recipe for an oat wheat bread in the last thread that was archived. I can post it again, or any other basic bread recipes you want, though I'm not sure how /fit/ approved they are since they use regular flour. I am going to begin experimenting with oatz and /fit/ style breads to see if I can come up with a palatable gainz cake or some sort of oat based "treat" that y'all can enjoy. I'm going to start with a pancake one, and will also try no bake cookies and a peanut butter and jelly bar....but I'm not so sure how well these will work out since I need to limit the carbs.
