Lettuce...well...iceberg is just filler, romaine is very good for you but it's got a slightly bitter taste that not everyone enjoys.
If you don't like lettuce, consider broccoli rabe - it's the leaves from the broccoli plant, very good for you and very tasty when made well.
Carrots and celery are probably the best vegetable snack food there is.
