OP here:
I've recently done 40 days with no meat or meat substitutes as an experiment and completed it so I know that I can stick to a difficult diet (I love meat).
I calculated that I need 6197 calories each day using

I want to make a 1 day meal plan which delivers these calories in the correct ratio of macro nutrients I can repeat for two weeks before I start tweaking it.
But, I want the diet to be dairy and gluten free, (which I believe is in line with Paleo diet) and seasonal - though seasonality is not critical...
I'm having a lot of difficulty figuring out what needs to go where and in which quantities, I was looking for some suggestions...
