Also, check xda-developers Defy section, looks like they already have some custom ROMS and a CM7 port going on

music: iPod (no other option, but works great for me)
video : vlc
social: live profile (exactly like bbm and widly used in my circle of friends)
4chan; Anonyma (not sure if it's on android)
msn: MSN (the offical app)
forum overall: no preference
facebook: facebook (the official app)
launcher: N/A
keyboard: N/A
sms: messages (the only one)
other apps: dropbox, pulse (news app), ihome (alarm clock), google

Nope, at least for a while. There are some custom ROMs but mostly just some cosmetic change (notification bar color, bootlogo, bootanimation).

For free apps, get Applanet. Google it
