Parts kits, how do they work?

I've been looking at parts kits more and more and I want to know what it takes to build a gun with one. Let's say I wanted to buy this:

You need a new or re-welded receiver, you need the general little bits of hardware like screws and bolts that were lost in transit, you need to machine the the barrel and the receiver to fit together in general harmony, and you might need to tweak some of the mechanical parts to get it running again.

Sounds like something a professional gunsmith needs to do. I expected as much.

They are cut with an acetylene torch to be "de-milled" which allows them to be imported. This process renders the receiver into paperweight status and it has the full-auto goodies stripped or ground out of it as well. The re-welding process is tedious and time consuming and you never really know how it's going to turn out.

Parts kits allow those with enough money, skill, and determination to build what they want and restore a piece of mechanical art back into condition at the same time. It is a gratifying experience.

That kit is cheaper than I'd thought it would be. Can anyone recommend a receiver? I kinda want this thing now.

So all I need to do to build a gun from a parts kit is to buy the kit, buy the receiver, then give them to a gunsmith for him to assemble for me?

Looking at this pic makes me wonder what kinds of parts kits there are out there.

/k/, I ask you, what are some of the best parts kits around, and which ones are truly unique that make you want to buy them immediately?

Eh. Building a parts kit is going to vary in difficulty. You don't always need to rework the barrel but you should understand the firearm you're trying to rebuild regardless.
Also, make sure you know you can get or make the parts you need before getting the kit or you're just going to end up with cosmoline covered paper weights.

..and make sure you're in the bounds of the law because it's better safe than sorry. That means required US parts count, barrel length, overall length, semi auto, all that crap...

Depends on what interests you.
I tinker with FALs but the good kits are largely dried up, with the best stuff having been the STG58s. Most of the STG58s were cherry and if you can find them they'll command some pretty high prices. That's not all though. There's been a barrel ban in place for a while along with some other stuff that's driven kit prices pretty high. AKs used to be fairly cheap kits for instance. Used to be...
