Being nitpicky aside, what you say is true about real fights. They look a lot messier and disorganized compared to any of the practiced moves and forms you've seen, in fact pulling off a picture perfect counter or punch is a thing of absolute beauty in the middle of a fight (see joe louis).
The most telling commentary i've seen on kung fu fighting is when some sports blogger noted that some of the most successful MMA fighters were wrestlers and grapplers and there were very few traditional kung fu fighters.
Hell bruce lee invented jeet kune do because he found traditional forms (while great for increasing body strength and learning fundamentals) were not particularly successful in a real fight.
The practical martial arts I know of are:
Jujitsu
Judo
Jeet kune do
Goju-ryu (half the moves are basically dirty fighting)
