Protips: yeast is always responsible for alcohol, whether or not you add it. that means adding yeast doesnt make your cider taste like beer any more than wine tastes like beer.
juice doesn't really matter, I prefer grapefruit myself. also tried grape, peach, mango(nice), blackberry, apple, and a few others.
pasteurized doesnt matter either assuming you add yeast.
preservatives, anything other than juice or acid, however, slow or prevent the process.
