Hellsing is good but the anime is incomplet. Evangelion is epic but likes to kick religion in the nuts and the end of evangelion is depressing. I don't know anything about the other series

I highly recommend Mushishi. It's a very beautiful anime. There isn't a rock solid story line, each episode is more of an individual story in itself. The music and art is sensational, and the stories of Ginko's travels are great.

Also, you can watch either the sub or dub (I think). I watched the sub first, then gave the dub a go, and I can honestly say I liked the dub just a little more. Ginko's voice actor in te dub is very fitting.
