The initial virus is created, and is harmless at first. Then it reads user inputs and, if threatened, it deletes indexed sections of it's code to give it a new function.
I forget what those are called. Basically, it's a virus written in multiple layers, where the whole of the layers allows execution to delete certain sections which, upon doing so, allows it to preform more functions that delete more sections, and so on.
A data-mining AI with the ability to use its mined data in programming has potential for reproduction and, depending on its privledges, distribution of it's own written programs.
At this point with current technological limitations, it would be more of a million monkeys on a type writer type of thing, but with a botnet it would be a real and potential concern. If not detected early on, it could mutate depending on what data it's able to gain access to.
I could explain the details of how it works, but it's easier for you to just take my word for it. It's possible, but not plausible right now.
