Usually they can't prove that you didn't see the sign. In my experience, having taken a few acting classes helps a lot. Put yourself in the character of a super fucking unobservant idiot naive Catholic school kid.
I have been caught by cops on nine different occasions, and have never been charged with anything other than a warning. In fact, I'd been granted free roam over some places after being dragged out by the cops and stood in front of the property owners a couple times.
If you get caught at a place it's usually a good idea just to write off that area, but if you do plan on going go again in a month and a half. The half is important, because if any followup work is done it'll be done on an exact measure nine times out of ten.
Also, is your intent to trespass? If not, then you have no legal or moral low ground. Feel good about it!
